Savory Meatloaf with Caramelized Onion Gravy
Juicy, tender meatloaf topped with rich, sweet onion gravy — pure comfort food!
Ingredients
For the Meatloaf:
1½ pounds ground beef (80/20 blend)
1 cup breadcrumbs (Panko or regular)
1 large egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme (optional)
For the Caramelized Onion Gravy:
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon flour
1½ cups beef broth
1 teaspoon Worcestershire sauce
Salt and pepper to taste
Instructions
Prepare the Meatloaf
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and thyme.
Mix gently (don’t overwork the meat).
Shape into a loaf and place in a greased loaf pan or on a lined baking sheet.
Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
Let rest 10 minutes before slicing.
Make the Caramelized Onion Gravy
In a skillet over medium-low heat, add butter and olive oil.
Add sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until deep golden and caramelized.
Sprinkle flour over onions and stir for 1 minute.
Gradually whisk in beef broth and Worcestershire sauce.
Simmer 5–7 minutes until thickened. Season with salt and pepper.
To Serve
Slice the meatloaf and generously spoon caramelized onion gravy over the top.
